Vinification
The grapes are harvested by hand, followed immediately by a soft pressing of the whole Chardonnay. Following the first fermentation, the yeasts are separated and the cuvée is prepared. Stored in steel tanks, it is bottled the following spring with the addition of selected yeasts. After remaining on the yeasts for a minimum of 24 months, the remuage is carried out and then the disgorgement, without the addition of sugar in the expedition liqueur, with subsequent packaging.
