Vinification
Chardonnay clusters are hand-picked into shallow boxes and then are gently crushed. The wine is then stored in steel tanks and bottled the following spring, and cultured yeasts added. After 36 months on the lees, you run the riddling and disgorging with the addition of the liqueur d’expedition.
